Add a checkout field: label, name (lowercase, the email tag becomes %customer_<name>%), type (text, textarea, email, phone, select with options [{value, label}], checkbox, country, date_of_birth, heading, paragraph, file_upload with file_types and upload_size_mb), required, placeholder, description.
Change a checkout field (the fields of wordpress_hotel_booking_create_checkout_field; send only what changes), or switch it off (enabled false).
Put the checkout fields in a new order: ids lists every field once, as guests should see them.
